Nankhatai
These were the first cookies I made when I was in college and was in experimenting stage in cooking. They turned out pretty well and it boosted my confidence. Its true that baking is therapeutic. My younger kid who is very choosy in food, liked these cookies, and what to say, my happiness knew no bounds.
Let's start with the process.
Ingredients:
Butter: 150 gms
Sugar: 3/4 cup
All purpose flour/ Maida: 1 cup
Salt: a pinch
Cardamom powder: 1/4 tsp
Pistachios: flakes, for garnishing
Method:
- Take a bowl, add butter and sugar, and mix well.
- Add maida, salt and make a dough.
- Make small balls of the dough, place a parchment paper on microwave tray and arrange the dough balls on the tray.
- Top the balls with some pistachio flakes.
- Pre-heat the oven and bake at 180 degrees for 20 minutes.
- Serve them along with tea.
