Hyderabadi Sire ka salan

Bakrid every year brings a lot of memories and lot of meat too😉 Sira means goat head. It is first burnt on charcoal and then cooked. It tastes too good. Let's get down to the recipe

Ingredients:

Goat head pieces- 1 kg
Onions- 1, sliced, big
Ginger garlic paste- 1 tbsp
Turmeric powder- 1/2 tsp
Salt accordingly
Red chili powder- 1.5 tbsp
Coriander powder- 1 tbsp
Desiccated coconut powder- 1 tbsp
Chopped coriander leaves- small bunch
Garam masala powder- 2 tsp
Oil- 2 tbsp+ 2 tbsp( for tempering)
Cinnamon sticks- 3
Cardamom- 2
Cloves- 5

Method:
  1. Wash and add goat head pieces to a pressure cooker.
  2. Add onions, turmeric powder, coriander powder, desiccated coconut powder, salt, red chili powder, garam masala powder, ginger garlic paste and mix well.
  3. Add oil, water, chopped coriander and close the lid.
  4. Cook for 5 whistles.
  5. When the pressure is gone, open the lid and add some chopped coriander leaves.
  6. Cook until semi thick consistency of gravy.
  7. Put a separate pan on stove and add oil for tempering.
  8. Add whole spices and when they splutter, lower the flame and add the curry. 
  9. Serve hot with rice or chapatis.
  • Tempering with whole spices enhances the taste.
