3 Coconut Breakfast recipes

 

Coconut is a must in our house hold, and breakfast items which have coconut in it are my favourite. We make a lot of recipes with it and today I'm sharing three breakfast recipes with you. They are very easy to make and super tasty, you are going to love it.

First let's make Pittu.

You get boiled rice in super markets. You can check in pictures below how it looks. Get some this time and make this yummy pittu. 


Ingredients: 

Red boiled rice- 1 cup

Water- 2 cups

Jaggery- 5 tbsp, grated

Coconut- 5 tbsp, grated

Ghee- 1 tbsp

 

Method:

  1. Wash the rice and sun dry. When all the rice is completely dry, put in a mixi jar and make it into a coarse powder. 
  2. Dry roast the rawa till it turns golden red.
  3. Put a pan on stove, add water and let it come to a boil.
  4. Lower the flame and add  roasted rawa and close the lid.
  5. When all the water is evaporated and rawa is completely cooked, switch off the flame.
  6. Transfer to a serving plate, add a dollop of ghee.
  7. Garnish with grated jaggery and coconut.
  8. Serve hot.

Another amazing breakfast made of coconut is coconut roti. This is not a crepe and is little thick and crisp too. This tastes amazing with tangy fish curry. It's my personal recommendation. Do try it.


Ingredients:

 

Grated coconut- 1 cup

Rice rawa- 1 cup

Idli rawa- 1/2 cup

Salt- 1 tsp/ accordingly

Water- 2 cups

 

Method:

  1.  Mix all the ingredients together.
  2. Heat a tawa, lower the flame, spread a ladle full of batter on tawa.
  3. Close the lid and cook for 15 minutes.
  4. Flip and cook for 5 minutes without the lid. 
  5. Serve hot.


Ingredients: 

Rice rawa- 1 cup

Grated coconut- 1 cup

Salt to taste

Water- 1 glass

 

Method:

  1.  Mix rice rawa, shredded coconut, salt and water together. The batter should not be runny. It should be thick, same consistency as nariyal roti above. 
  2. Take idli plates, apply oil and spread the batter as idlis.
  3. Add 2 glasses water to idli pan and place the idli plates in it. 
  4. Cook on low flame for 15- 20 minutes.
  5. Switch off the flame, open the lid and let it cool for 5 minutes. If you try to remove the mutkule from idli plates without cooling a bit, they break. 
  6. Serve along with chutney, pickle or any curry of your choice.
