Chewy Chocolate chip cookies

Chocolate chip cookies are those cookies you MUST have in your life. These are crunchy on the outside and soft, chewy inside. For baking recipes, my only stop is @Sally's Baking Addiction. This recipe is also adapted from her blog.

Preparation time: 10 minutes
Cooking time: 25 minutes
Resting time: 2- 3 hours
Total time: 3 hours 35 minutes
Yields: 30 medium size cookies


Ingredients:
 

All purpose flour- 2 1/4 cups

Sugar- 1 cup

Baking soda- 1 tsp

Corn starch- 11/2 tsp

Salt- 1/2 tsp

Unsalted melted cooled butter- 3/4 cup

Eggs- 1 + 1 yolk at room temperature

Vanilla essence- 2 tsp 

White chocolate chips- 1/ 2 cup

Dark chocolate chips- 1/ 2 cup 

Method:

  1. Whisk together all the dry ingredients, all purpose flour, salt, baking soda, cornstarch in to a bowl. 
  2. Whisk all the wet ingredients eggs, vanilla essence, butter, sugar in a separate bowl.
  3. Now mix everything together till there are no lumps.

  4. Make 2 parts of cookie dough. Mix white chocolate chips in one part, and dark chocolate chips in another. Save some chocolate chips for later. 
  5. Refrigerate for 2- 3 hours.
  6. Take out the cookie dough from the refrigerator, make small balls( 1 tbsp each) and place on a baking sheet on a baking tray. 
  7. Press few chocolate chips on the balls.
  8. Pre- heat the oven and bake at 180 degrees for 25- 30 minutes.

Stove- top method:
  1. Place a pressure pan on stove and put a stand in it.

  2. Heat the pan.
  3. Take a steel or aluminium bowl and grease it with butter or oil.

  4. Make balls of dough and place in it.

  5. Place the bowl in the pressure pan, close the lid and cook on low- medium flame for 40- 45 minutes.

Your chewy chocolate chip cookies are ready!

Let the cookies cool for atleast 10 minutes before removing from baking tray, heat helps to cook a little more.

Wisdom bites:
  • Do not put the gasket on the pressure pan lid while baking on stove top. It tends to burn.
  • Refrigerating the cookie dough is mandatory, otherwise when you bake the cookies, they spread out a lot. 
  • Adding cornstarch makes the cookies chewy and thick, secret of chewiness in the cookies. 
  • One more thing which makes the cookies chewy is melted butter. Melt the butter, let it cool down and mix in flour. This adds to the chewiness of the cookies. 
  • And one final thing which makes these cookies chewy is the extra egg yolk. It holds the dough good and makes the cookies super chewy and soft.
  • We are rolling the cookies into balls and baking them, not flat. This also makes the cookies thick.
  • Slightly underbake them, remove them from the oven when there are 5 minutes left. To make them chewy again.
