Donne biryani

 


Donne biryani is very famous in Bangalore, Karnataka. And before you wonder what donne is, they are bowls/ plates made of dried palm leaves. Biryani served in donne is called Donne biryani. 
Donne biryani is not made using basmati rice, but jeerga samba rice also called as jeera rice is used to make this biryani. Mint leaves, coriander leaves and green chilies are made into a paste and used, hence the green color of biryani. Its loaded with flavours and looks beautiful with tiny grains of rice.


Let's get ahead in the making of this biryani.


Ingredients:

Jeera rice- 500 gms

Chicken- 500 gms

Turmeric powder- 1/4 tsp

Salt accordingly

Yogurt- 150 gms

Lemon juice- 1 medium size

Water- 3 cups

Oil- 3 tbsp

Ghee- 2 tbsp

Cloves- 5

Cinnamon- 2

Cardamom- 2

Ginger garlic paste- 4 tbsp

Anise- 1

Bay leaves- 2

Onions- 1 medium

For green paste:

Coriander leaves- fistful

Mint leaves- fistful

Green chilies- 5


Method:

  1. Wash rice, soak in water and keep aside.

  2. Clean and wash chicken.
  3. Add turmeric powder, salt, yogurt and lemon juice to chicken and mix well. 


  4. Make a paste of coriander leaves, mint leaves and green chilies. Keep aside.
  5. Place a pressure pan on stove, add oil and ghee. 
  6. When the oil heats up, add cardamom pods, cloves, anise, bay leaves and cinnamon. 

  7. Add sliced onions and fry till brown.
  8. Add ginger garlic paste and fry till the raw smell goes away.
  9. Add the marinated chicken and mix well.
  10. Now add the green paste and saute.

  11. Give it a proper mix and add water.
  12. Add drained rice and cook for 5 whistles.
  13. Open the lid when the pressure is gone and serve hot with raita.
